The Santenay Le Beauregard is well constructed and develops a floral bouquet. The palate is often very long, with fatty tannins.
The wine is placed in French oak barrels. Malolactic fermentation can then start with bacteria naturally present in the juice. Aging lasts 14 months on fine lees. We follow the lunar calendar ("fruit" day) for bottling without fining and without filtration.
