The non-vintage Brut that Veuve Clicquot has built its name on since 1772. Madame Clicquot ran the house as a widow in her twenties and came up with the riddling table that every Champagne house still uses.
Pinot Noir leads the blend, which is where the weight and the baked-apple, poached-pear character come from. Chardonnay adds lift, a little Meunier rounds it off, and reserve wines from earlier harvests go into every batch. That's how it tastes the same year after year. Ginger and grapefruit zest on the finish. Dry, but not austere.
Serve it cold, around 45F, in a tulip glass rather than a flute if you have one. Good with oysters, sushi, fried chicken, salted almonds, or on its own before dinner. It's the bottle most people picture when they say "bring Champagne".
