Ruinart was founded in 1729, which makes it the oldest established Champagne house. This Blanc de Blancs is 100% Chardonnay and the wine Ruinart is best known for, aged in the house's chalk cellars deep under Reims.
It's bright and precise. Lemon, apple and pear on the nose, with a little smoke and toast from time in the cellar. The palate is taut with cool-climate Chardonnay tension, then broadens into toasty citrus, hazelnut and a mineral finish. Fresh, but not thin.
Serve it cold, around 45-48F, in a white wine glass so the aromas can open. It's superb with oysters, scallops, sushi or a soft cheese. The round bottle is distinctive, and it's a favorite of people who like their Champagne crisp rather than rich.
