SANSSOUCI CABERNET SAUVIGNON

This wine is 100% cabernet sauvignon from the Pays d'Oc appellation in Languedoc. The fruit was all destemmed prior to the long, cool fermentation in open vats. Following malolactic fermentation, the wine was aged for six months (10% in oak) before bottling.

The wine showed a dark ruby color. Blackberry, raspberry, currant, loamy earth and oak all arrived on the nose. Blackberry, raspberry, cherry, loamy earth, licorice and oak followed on the deep, earthen palate. The wine exhibited great structure and length, along with moderate tannins. This wine would be an ideal pairing for a classic preparation of Cassoulet.
