Biodynamic, harvested by hand, no fining or filtration and a long maceration blend of whole cluster skin-contact Savagnin (21 day maceration, spontaneous fermentation, 8 months in neutral barrels), Gewurztraminer (24 day maceration, spontaneous fermentation, 8 months in neutral barrel) and Chardonnay (whole cluster pressed, spontaneous fermentation, barrel fermented, neutral barrels)
