Made from 100% Gamay planted over volcanic basalt. Fruit is de-stemmed and undergoes a 5-month maceration using spontaneous fermentation in anfora with indigenous yeasts.

Aged 12 months in neutral oak, and bottled unfined and unfiltered, with no added sulfur. Salty and smoky, with bright acidity.
