Sonata n°9 is a natural vintage champagne (confidential, 7000 bottles) which presents a fine and delicate bubble, and complex aromas. This vintage is a pure pinot noir, converted into wine with the biggest care, without sulfure. It is endowed with a singular personality.
For this vintage, they use their selected yeasts worked out by the domain in 2006 after 10 years of research and develop this special vintage only when the grape harvest present all the conditions favorable to a new adventure : the wine making of a vintage in the respect absolved from some fruits, that is a wine making without sulfur.
