DESCRIPTION

Vineyards

The Clos de la Dioterie is situated next to the winery, it dominates Les Varennes du Grand Clos. This vineyard of over a little more than two hectares boasts incredibly old vines (70 to 80 years), highly calcareous clayey soil and north-east exposure, everything needed for perfect grape maturity. These very old vines, with a low yield (30 hl/ha - or 1,210 litres per acre), are given all the care and attention they need to flourish.

Winemaking

With its north-east exposure, this is the last vineyard to be harvested, as we wait until the grapes on these old symbolic vines reach the apogee of maturity. With great effort on our part, we take the grapes brimming with concentrated juice to the "chai" (winery), right next door to this vineyard. A rigorous selection while harvesting, meticulous vatting with exacting checks during vinification, careful monitoring of the maceration period: everything in this "cuvée" requires the greatest of care and attention to obtain results worthy of its reputation. All the techniques used to produce Clos du Chêne Vert, are adapted to Clos de la Dioterie according to the specificities of each vintage. The maturation process is also the same. During the final blending, the discrete yeat great complexity of this rare wine is already in evidence, a wine that will reach its full expression after many long years.

Tasting advice

The real complexity of this wine from old vines takes 5 to 6 years of ageing to reveal itself. It rarely reaches its peak before 10 or more years.
