Weinstock Chardonnay Cellar Select 2016

Weinstock Cellar Select is a spectacular wine exhibiting the finest characteristics of carefully selected grapes grown in the fertile Russian River region of California. Displaying top notes of citrus with tropical fruit, the wine is fermented in small barrels followed by aging sur lie, lending it a rich mouth-feel with a pleasing oak bouquet and flavor. Pairs well with poached fish, light preparations of veal or turkey, or pasta dishes with light sauces.

This pleasant little chardonnay was aged "sur lie" [pronounced 'soor Leez'; French for "on the lees"], that is it was allowed to remain in contact with the dead yeast cells and small grape particles that form the sediment (or "lees") that accumulate naturally during fermentation. Usually the lees are separated out, but sometimes winemakers allow the wine to age “sur lie” in an attempt to further develop the flavor and complexity of certain white wines. This medium bodied white wine was aged in small oak barrels, and shows some very appealing if not altogether complex aromas and flavors of apple and citrus with hints of vanilla and butter.
