Once in the winery the fruit is fermented in 300 litre casks before being left to age for 6 months on the gross lees and another 6 months on the fine lees.

This adds plenty of power and complexity to the wine, producing a full-bodied wine with a creamy, silky texture and intense notes of ripe orchard fruit, honey, fresh pastries, and lingering notes of citrus and spice.
