GEOLOGY
The grapes come from the 1st Cru "Les Gravières" plot in the village of Santenay, south of the Côte de Beaune. "Les Gravières" is the best premier cru in Santenay. Soil: clay-limestone. Marly soil. Strong slope. 100% pinot noir. Guyot with different annual works of the vine (pruning, trellising on wire / knotting, stripping).

VINIFICATION
Harvest by hand. The grapes are sorted twice (during picking and on the sorting table), then partially destemmed (if necessary, depending on the quality of the berries a third sort is performed with our optical sorter). They are then placed in thermo-regulated tanks. The alcoholic fermentation can start with natural yeast and will last about 3 weeks. Very soft windings in order to respect the raw material and to obtain the purest and most representative wine of the soil. Gentle pressing.

ELEVAGE
The wine is put in French oak barrels (20% new oak). The malolactic fermentation can then start with naturally occurring bacteria in the juice. The aging lasts 14 months on fine lees. We follow the lunar calendar (day "fruits") for bottling without sticking or filtration.

TASTING
The Santenay 1era Cru Les Gravières is well built and develops a floral bouquet. The mouth is often very long, with fatty tannins. This wine reminds us of the Grands Crus of the Côte de Nuits.
