GEOLOGY
The vines are located in the Meursault sector, in the south of Côte de Beaune. The plot "Les Perrières" is close to the plots of Meursault 1er Cru "Les Genevrières", south of Meursault. Soil: clay-limestone. The slope is quite weak. 100% Chardonnay - Guyot with different annual works of the vine (pruning, trellising on wire / knotting, stripping).

VINIFICATION
The grapes are harvested by hand and sorted during the harvest. They are lightly pressed in a pneumatic press to obtain a slow extraction. After a slight settling, the wine is put in French oak barrels of 228 liters (25% new oak) for fermentations (alcoholic and malolactic) with natural yeast for 16 months.

BREEDING
Maturing on fine lees. One month before bottling, the wine of the different casks is placed in a stainless steel tank to make the assembly. The wine is finally glued and slightly filtered before bottling according to the lunar calendar (day "root" for the wines of guard).
