GEOLOGY
The grapes come from the Mâcon regional appellation in southern Burgundy. Soil: clay-limestone predominantly limestone. 100% Chardonnay. Guyot with different seasonal processes in the vineyard (pruning, wire trellising / knotting, leaf stripping).

VINIFICATION
The grapes are harvested by hand and sorted during the harvest. They are lightly pressed in a pneumatic press to obtain a slow extraction.

BREEDING
After gentle decanting, the wine is put in French oak barrels of 500 liters (10% new oak) for both fermentations (alcoholic and malolactic) with natural yeast for 11 months. Matured on fine lees. One month before bottling, the wine of the different casks is placed in a stainless steel tank to make the assembly. The wine is finally glued and slightly filtered before bottling according to the lunar calendar (day "fruit").
