Vincent Dauvissat now runs one of the most important wineries in Chablis, which has a unique vineyard heritage characterised by incredible tension and minerality conferred by the soil type and climate. The Chablis wines of Dauvissat are famous throughout the world.
It has a luminous straw yellow colour, while the nose offers a complex bouquet of flint, citrus, yellow flowers and toasted bread for a taut and lively, balanced and persistent sip.

WINE-MAKING: Pressing and settling of the must, slow fermentation at low temperature in cement vats, where the wine remains until after malolactic fermentation (about one year), then it is transferred into oak barrels.
