• Reposado tequila produced in Amatitán, Jalisco, by Destiladora La Roca (NOM 1646) • Maestro Tequilero Héctor Dávalos • 100% estate-grown organic Azul aka Blue Weber (Agave tequilana) matured over 6 years • Cooked 42 hours in 32-ton brick ovens • Crushed using a roller mill • Open fermented in stainless steel tanks for 72 hours using deep well water with proprietary yeast and ambient yeasts • Double distilled in pot stills; the first distillation in a stainless steel pot still and the second in a copper pot still • Aged 6–10 months in ex–bourbon and ex–rye whiskey casks • USDA Organic certified • Additive free • 40% ABV Tequila Cabal’s reposado combines tequilas ranging from 6–10 months in oak, in this case blended from two parts tequila aged in ex–Russel’s Reserve Bourbon barrels, one part ex–Russel’s Reserve Rye barrel, and one part ex–Old Elk Wheated Bourbon barrel. The results are inviting and cozy, with pronounced oak generously bolstering the blanco’s sweet fruits and spices.
