• Blanco tequila produced at Hacienda de Oro (NOM 1522) in Amatitán, Jalisco • Maestro Tequilero Jaime Villalobos Sauza • 100% Azul (A. tequilana, aka Blue Weber) harvested at maturity, between 5 and 7 years of age • Cooked for 12 hours using autoclave; cooled inside the closed oven for another 36–40 hours • Milled using a steel roller mill • Spontaneous fermentation with deep well water and only ambient yeast, in open-air stainless steel tanks • Distilled twice using stainless steel pot stills with copper heads • Aromas of dried dark cherries, milk chocolate and toffee, almond, purple flowers, and wet clay yield to a savory palate underscored with black pepper, birch bark, a hint of toasted hazelnuts, candied yam, and roasted carrots • Certified Jay Kosher • 40% ABV Inviting and deep, this tequila is a benchmark example of the classic Valles (or “lowlands”) profile. Dark fruits and cocoa nibs, rich toasted nuts, black peppercorns and a subtly floral counterpoint are all on full display here, yet never overshadowing the warmth and aromatic generosity of cooked agave, which softens and sweetens the whole experience like a caramel-coated blanket.
