This dry Riesling comes from a single parcel within the larger Bopparder Hamm, a unique region found in the Rhine river's largest loop. Florian Weingart owns three of these sub-plots, creating his Kabinett Trocken from the vines of the Ohlenberg with it's Devonian slate and loess soil. The vines are trained to grow very deep roots and give miniscule yields. Weingart's techniques in the cellar are minimal with ambient yeast fermentation and no oak. Clean and precise with beautiful floral aromas leading to a light, delicate palate.
Pair with: oysters, sushi, sauteed whitefish
