Semillon grows in Happs' Three Hills vineyard at Karridale (far south Margaret River) under dry conditions on a wide trellis that results in golden rather than green (chlorophyll rich) fruit and riper flavor.
Organic practices in the vineyard, 100% grass mulching, little use of fertilizers, no insecticides etc. The fruit is hand-picked, with juice fermented and aged in stainless steel for nine months. 400 cases made.
