DESCRIPTION
Fermented spontaneously and mostly aged on the full yeast in small used barrels and bottled with only a little sulphur. The light copperplate suggests the grape variety, on the nose red Williams pear, light exoticism with papaya, plus a delicate yeast touch with fine reduction, earthy and subtly spicy.
On the palate a fine creaminess with solid acidity support, fine fruit sweetness, the minerality of the limestone soil is recognizable, orange peel and grapefruit, good grip from the peel and yeast.
