• 100% Sauvignon Blanc • 66% of the fruit is sourced from Gabriëlskloof. The rest is sourced from two vineyards in Olifantsrivier • Whole bunch pressed and fermented in locally made clay amphorae, and then aged for 7 months on the gross lees • The amphorae range in size between 500L-860L and are porous with no lining inside, allowing for the perfect amount of micro-oxidation during maturation
