DESCRIPTION
100% Assyrtiko grown in volcanic soils in the villages of Pyrgos and Imerovigli. Vines are 40-60 years old, grown on their own rootstock, and trained into kouloures, the traditional basket shape, to protect from wind and conserve water.
Destemmed, macerated for six hours. Fermented and raised in stainless steel.
