• 100% Riesling • The fruit is sourced from the Best’s Great Western vineyards • The fruit is put into press, with most of the juice run off, and left on the skins for 6-8 hours in a 2,500L Austrian foudre and a 2,500L French foudre • Fermented with indigenous yeast for 3-4 weeks never going over 20ºC • Aged for 9 months in stainless steel • The first vintage of Foudre Ferment was in 2012, and this is the first time Best’s used an Austrian foudre
