This was matured approximately 50/50 in ceramic jars and oak vats, and the ceramic container gives it a seriousness and extra dimension of depth.
Medium plus aroma intensity. Very original and savoury. Underbrush, earthy, rotten seaweed, shrimp paste, umami, creme fraiche, bell pepper and pine nut.
