• 52% Syrah, 20% Mourvèdre, 15% Grenache, 13% Barbera • Sourced from their estate vineyard in the western edge of the Upper Galilee at 800m ASL • Soils are composed of a gravelly flint (silex) clay • Hand harvested • Natural fermentation in open-top vats, some of the Syrah is whole-cluster fermented • Aged 12 months in Austrian oak oval foudres and French oak barrels (all neutral) • Racked and blended then aged another 6 months in concrete tanks before bottling
