There is density and concentration sure, but the drying process of the grapes evinces an uncanny phenolic authority as much as the altitude of the vineyard sourcing and saline tendency of the volcanic soils, impart freshness.
Despite the generosity of quince paste, torrefied almond and the bitter orange marmalade pithy finish, this is akin to an electric toothbrush whirring through the mouth and sweeping the sugar away to the point of palpable dryness. Brilliant!
