Destemming is followed by a soft pressing of the fruit. Fermentation and maceration with the skins, followed by racking in oak casks for malolactic fermentation. Wine is aged for 5 months in 50 Hectolitre oak casks.

The vinification of the wines is extremely careful combining tradition and modern technology in order to obtain the best expression of each grape variety and of each terroir.
