The nose is pure noble reduction: matchstick, flint, pain grillé. In this, it calls to mind reductive-style white Burgundies such as those of Coche-Dury and Pierre-Yves Colin.
The palate is bracingly dry, repeating the flint from the nose in a slate-inflected mineral profile with flavors of tarte tatin mingling with more savory, salty elements.
