• 100% Palomino sourced from three certified organic parcels within the iconic vineyards of Balbaína and Burujena • Planted in 1986 and 1996, the parcels have been certified organic since 2003 and 2008 respectively (two of the oldest certified parcels in the region) • Hand-harvested, pressed followed by a brief maceration before spontaneous fermentation in tank • Aged in tank on the fine lees for 4 months before bottling • Sábalo is the local name for Shad, the common yet beloved fin-fish that adorns the label • Certified Organic (CAAE)
