Then she found The Lost Slipper. With vibrant tropical fruits and a rich, round style, it was the perfect fit. The nose radiated lively passion fruit aromas, giving way to ripe guava and pineapple flavors. The varietal’s bright, crisp character was elevated by sur lie aging, which added weight and fleshiness to the palate. Friendly, inviting and delicious, it was love at first sip.A little California sunshine, a dash of cool coastal breezes, mixed with variety of soils - and voila – the average wine grape becomes an extraordinary one. From vineyards throughout the state, we selected grapes that showed rich, tropical fruit-driven styles. The variety of sites gave depth and complexity of flavors. The North Coast provided ripe pineapple flavors, the Central Coast the citrus and passion fruit and the Central Valley the guava and stone fruit. Together, they created dimensions and layers in the final wine.To get a richer, fleshier style in our Sauvignon Blanc, we harvested the fruit at the peak of maturity. The grapes were then fermented in stainless steel at low temperatures to preserve the fresh aromas and capture the intense flavors. Following fermentation, we aged the wine on its lees. This process, which keeps the juice in contact with the spent yeast cells, creates richness and depth.
