The 2017 Chablis Vieilles Vignes is considerably more serious, hailing from vines that average 50 years of age, with 15% of the cuvée matured in demi-muids. The wine offers up notes of green apples, lemon oil, white flowers and oystershell, followed by a medium to full-bodied palate with a textural attack, a good core of fruit and tangy balancing acids. It's a promising wine and a very creditable example of the appellation, with some of the mid-palate weight that typifies the wines of Maligny.
This particular wine comes from 35+ year old vines and is aged partially in stainless and partially in older, neutral oak. The ’17 vintage gives this wine a bit of extra zip in the midpalate, and it’s a supremely elegant and irresistibly mineral-driven wine.
