DESCRIPTION

• Olive-flavored extra dry vermouth produced by Veso in San Francisco, California • Botanicals include Castelvetrano olive, dill seed, rosemary, thyme, oregano, lemon peel, orange peel, and wild foraged kombu • Base of locally sourced California white wine (variety and source may vary batch to batch) • Neutral grape spirit distilled in Alameda, California • Sweetened to 18 g/l using cane sugar • Savory rosemary, thyme, yerba santa, and white flowers on the nose transition to a vinous, umami-rich palate of Castelvetrano olive, lemon, oregano, and sea salt with a dry, briny finish • Beer and Wine License eligible • 18% ABV Formulated to act as the perfect vermouth for a Dirty Martini, Veso’s Olive Vermouth is a savory and herbaceous vermouth made from local California wine produced using organically grown grapes, olives, and other botanicals as well as wild foraged kombu—a kelp used to amplify and add umami. Each batch begins with a three-to-four-week maceration of fresh, unpasteurized Italian Castelvetrano olives in neutral grape spirit while the olive brine is reserved and fortified for stability. The olives are then pressed, and the remaining botanicals are added to the infusion along with white wine and the fortified brine for an additional maceration. Lastly, a kombu infusion is added, and the entire blend is filtered and sweetened.
