• 100% Cartoixà (a local name outside Tarragona for what the ‘northerners’ call Xarel-lo) • sourced from a tiny (~0.5-hectare) parcel of sixty-year-old vines on clay-limestone in Falset village • Ferments spontaneously in a single neutral 600L demi-muid for 3-6 months (or an even smaller barrel in lower-yielding vintages) • Ages for an additional 12-14 months in the same barrel and an additional 2 years in bottle • Certified Organic
