Maestro Mezcalero Vicente Sánchez Parada
Made from 100% Madrecuishe (Agave karwinskii)
Cooked in a traditional earthen pit oven
Milled using a traditional stone tahona
Open-air, spontaneously fermented in pine and cypress vats (tinas) using river water
Distilled twice using copper pot stills
Soft and generous with aromatics of pencil shavings, green herbs, bell pepper, cinnamon, and pimento. The palate shifts gears, offering sophisticated layers of roasted apple, grilled mango, and pineapple with a silky and herbaceous mid-palate that calls to mind tacos al pastor
