• A rare, certified organic manzanilla! • The Palomino used for Salicornia come from two, 30 year old albariza soil vineyards, which have been certified organic for over 15 years • Grapes are harvested by hand and fermented separately • Biological aging in a brand new Solera started in 2020, with the first saca bottled in September 2023 • Bottled en rama (directly from the cask with minimal filtration) • Named after a wild, salty, gently-bitter sea-bean that grows in the salt marshes off the coast of Cádiz Certified Organic (SOHISCERT)
