This wine opens up with Jurassic’s signature mineral scented nose, followed by peach skin, candle wax and dried flowers. On the palate, an almost architectural streak of acidity adds poise and length to flavors of almond paste, dried herbs and peach all of which carry through to a long, complex finsih in a light phenolic style.
This wine pairs beautifully with seafood dishes, such as oysters, grilled fish, or a light seafood pasta. It also complements fresh salads, goat cheese, and light poultry dishes.
