Le Dauphin d'Olivier Blanc is the second label of the Château's white wine, though it drinks better than many Châteaux's Grand Vin! Made with the same attention to detail as the Château Oliver Blanc, Le Dauphin is a blend of 50% Sauvignon Blanc and 50% Sémillon, fermented and aged in a mix of stainless steel and French oak barrels. In the glass, the wine displays a lovely pale lemon color with green reflections. On the nose, intense aromas of guava, peach and a flinty mineral tone explode from the glass with a touch of oak spice.
The palate is lively and generous with a smoky, saline minerality to counter balance the ripe tropical fruit flavors, rounded out with a slight creamy texture that brilliantly plays off the refreshing acidity. Enjoy with a lobster and avocado salad, lime and dill-marinated salmon (roasted or grilled) or linguine with crab meat.
