Ciliege di Poli is a fruit brandy made white Durona cherries from the Marostics Hills in the Veneto. Cherries were brought to this region as early as 64 AD from the Asiatic city of Cherasus (after which the fruit is named). The fruit is fermented in stainless steel tanks before distillation. Poli uses copper pot stills for distillation, which is carried out in May at the time of cherry harvest. The final distillate, at 75% abv, is lowered to 40% by the addition of distilled water. It is then chilled to 40°F, filtered and bottled.Ciliege di Poli is a clear brandy marked by aromatic notes of cherries and bitter almonds. On the palate it is smooth with flavors of almonds and cherry blossom.
