• Single cask single malt Scotch whisky produced by Kilchoman Distillery in Islay, Scotland • Bottled exclusively for ImpEx Beverages • Cask no. 1474/2019 (Impex Cask Evolution 02/2025) • 100% malted barley peated to 50 ppm • Water sourced from the Allt Gleann Osamail burn, adjacent to the distillery • Average 82-hour fermentation in stainless steel • Distilled twice in Forsyths copper pot stills • Aged 5 years in an ex-Moscatel de Setúbal barrique; filled on 9/22/2019 and bottled on 2/21/2025 • Peat smoke with notes of candied citrus and white grape flesh on the nose become a play between rosewater, eucalyptus, lychee and salt spray on the palate. The floral elements persist on an elegantly smoky and dry finish. • Cask yielded 309 bottles • No added coloring • Non-chill filtered; bottled at a cask strength of 58.4% ABV Consisting of limited release collaborations with the Kilchoman Distillery, the ImpEx Cask Evolution series explores the effects of a single cask on a maturing whisky. For this release, a Moscatel de Setúbal barrique from southern Portugal interacts with the subtle fruitiness and modest peat of the Kilchoman whisky to produce an enticing blend of exotic fruit notes, flecked with salt and smoke.
