High Ester Blend Rum, Lbi/Dhe, El Dorado

• Aged blended Demerara rum produced by Demerara Distillers Limited at Diamond Distillery, the last remaining distillery in Guyana • Produced in accordance with the Demerara Rum Geographical Indication • Blend of column and pot still rums distilled from molasses in DDL’s John Dore double retort copper pot still (DHE) and heritage French Savalle still (LBI) • Aged 11 years in ex-bourbon casks • Peanut brittle, toffee, cocoa powder, and orange zest on the nose precede a rich palate of caramel, honey, dried figs, and nutmeg with vanilla finishing with classic Demerara rum minerality and faint smoke on a long, confectionary finish • Bottled at a cask strength of 57% ABV This is the first of nine high ester blended rums crafted in response to increased demand for the lesser-known marques from Diamond Distillery’s fourteen operating stills. The El Dorado High Ester Blend is a blend of two marques: the Diamond High Ester (DHE) marque and the inherited La Bonne Intention (LBI) marque. Rum nerds take note—the DHE marque is distilled in Diamond Distillery’s John Dore double retort copper pot still from a wash fermented over several months, resulting in final ester levels over 1,500 g/hL AA (grams per hectoliter of absolute alcohol). Expect a concentration of rich fruit and confection rather than gamey hogo.
