A gorgeous Champagne coming from 60 year old Chardonnay vines planted adjacent to the esteemed Chétillons vine site. The soils are chalky and laden with limestone.
The base fermentation was in older barrels and the wine rested sur lie for 72 months before disgorging. Enjoy with a salmon tartare topped with caviar.
