
IT'S ALL IN THE DETAILS
Sotol is not a tequila; it's not even an agave. This spirit is made from an agave-like plant also called a dasylirion wheeler or desert spoon. This is harvested wild and after it is cooked, it is fermented with Champagne yeast. This sotol reposado is aged for six months in new French oak. It is certified organic by the USDA.
