Pale straw in color; moderate perlage. 7-8C appears the temperature to fully enjoy this sparkling. Yeast, shredded apples, citrus, and mushrooms on the nose- simple but elegant. Apples, lemon, brioche, yogurt, and minerals on the palate.
Feels more towards extra brut or even brut nature. Get fatty tuna sushi for a dream-like pairing. It’d also be just fine for a formal toast if chilled to 4-5C.
