Glencadam isn’t among the better-known Highland single malts; the distillery has been around since 1825, but production had ceased as recently as 2003. Under its current ownership, the brand has thrived, although it’s still somewhat under the radar. The limited-edition 25 Year Old, laid down before the turn-of-the-millennium shutdown of the distillery, is a beauty. Aged in ex-bourbon barrels, it’s quite sprightly for its age, with a pale gold color and a sweet, floral nose. It’s supple and creamy on the tongue, with rich notes of vanilla, honey, and marzipan, and a dry, slightly spicy finish.
