This was fermented in a concrete egg and transferred to old oak barrels. Medium yellow in color with moderate plus intensity.The nose opens with precise and delineated apricot, lemon oil, and a just there note of oak spice. The palate is just shy of moderate in weight with apricot, lemon oil and a delicate oak note.
The wine pairs well with creamy salmon soup that lingers with dill and salmon roe, as the acid and flavors would brighten the dish.
