On the nose, the wine is fine and mineral with notes of white flowers.
The attack is fresh, the complexity is set in the middle of the mouth mixing the minerality with a nice fruity.

Grape variety: Chardonnay 100% aged 35
Terroir: Clay and limestone. Plot at the bottom of the hillside, facing south.
Vinification: After manual harvesting, without destemming but crushing; the pressing is pneumatic. The must is directly put in casks where the alcoholic and malolactic fermentations are made. Aging: fully barreled with 15% new oak. About 10 months.
Food pairing: Crustaceans, fish terrine, fish in light sauce.
