The cellars of the Estate are located in the heart of the village in old family homes. These are not entirely buried due to the village's very high water table.
The breeding of Puligny Montrachet Clos du Vieux Château blanc 2017, François Carillon estate is done in accordance with the Burgundian and family tradition. The wine will stay there for a year in oak barrels where the alcoholic and then malo-lactic fermentations will take place, and this for all appellations. The alcoholic fermentation lasts from four to six weeks, and is followed by the malo-lactic fermentation which is often more capricious depending on the vintage.
Puligny-Montrachet is a commune located in the department of Côte d'Or and the Burgundy region. The soils are clay-limestone, rich in stone, well drained. This appellation is included in the Côte de Beaune vineyard.
