SOIL
Limestone soil in the district of Mercurol.

VINIFICATION
Grapes are pressed when they arrive at the winery. After pressing, the must is cold settled for 48 hours.
Temperature-controlled fermentation at 18° to 20°C.

MATURING
Around 10 months on fine lees.
