The alcoholic and malolactic fermentation is carried out in 35hl wooden casks shaped as truncated cones. The wine is then transferred to French tonneaux and barriques where it ages for 15-18 months. After bottling, the wine is kept on the property for a minimum of 6 months rest before its release.
