• 100% Carricante from the Santo Spirito contrada in the township of Castiglione di Sicilia • Vines planted to deep, soft and dark volcanic soil, rich in volcanic ash • 700-800m above sea level. Vines range between 10-40 years old • Soft pressing, low temperature fermentation in French oak barrels of a capacity of 5 and 10 hl • Malolactic fermentation and maturation in French oak barriques for 10 months followed by finishing in the bottle for 9 months • Annual production: 4,500 bottles
