• 100% Carricante from the contrada (or subzone) of Calderara Sottana in the township of Randazzo • 600-650 meters above sea level • Extremely rocky volcanic soils speckled with black pumice and solid volcanic rock along with sand • 5-30 year old vines • Fruit harvested at the end of September • Soft pressing, low temperature fermentation in French oak barrels of 5 and 10 hl • Malolactic fermentation and aging only in stainless steel for the first time in harvest 2024 • Annual production: 6,000 bottles
